Orange marmalade

Organically grown oranges plucked from the gardens of Paradise, are fashioned into what many Italians are describing as ... "the best marmalade in Italy!"

We make our marmalade in small batches at a time due to the size of our saucepan.  Therefore flavours vary from one batch to another but that is the nature of pure, organic and homemade jams and we make no excuses for it. 

We also pluck lemons from the trees here in the Paradise garden which means lemon curd, lemon marmade and a tasty combination of orange and lemon marmalade.

Gaeta olives in brine

The black olives of Gaeta (where we live) are prized for their oil and the fact that they make a perfect plate to join the antipasto.

Our olive trees provide a glut of these tiny black fruit every other year. When the fruits are in abundance, Enzo gathers up the olives and delivers them to Zangrillo, our local frantoio, for making into extra virgin olive oil.  The following years less abundant harvest is gathered for brining ... and here they are.

We have available a small amount of 2011 Gaeta olives in brine.  Organic and prepared as every other Italian family prepares them, our olives from the Paradise garden have been sitting for the statutory 1 year and are now ready to eat.

Fresh herb and floral vinaigrettes

We are growing our own herbs here in the gardens of Paradise including purple basil. We discovered last year that purple basil makes the most amazing vinaigrette and so too do the flowers from the orange tree.

It takes up to 6 months for the full flavours of Paradise to infuse but we think that it's worth the wait.  Once it's reached it's peek of floral perfection, we pour it into recyled Chinotto bottles.
