Amuse Bouche Herbed Cheese

with Keta

In many countries salmon roe or Keta is not as expensive as conventional caviar.  In the markets at Parthenay, a little village in France where I used to live, which are held every Wednesday, you will commonly buy Keta by the gram at any of the fish stands.  All fish roes contain Omega-3 and you could be getting nearly 2% of your daily intake from every ounce.  With the fresh chives providing 14.65% of your daily antioxidants, this is a match made in brain food heaven. 

Just a word about Pumpernickle bread.  It is one of the least processed of all breads and therefore takes longer for your body to digest.  This is a good thing since it will then provide you with carbohydrates over a long period of time and you'll be less hungry later.  This also qualifies pumpernickle to be lower on the Glycemic index scale with a score of 41 compared to white breads which hover around 68.

Ingredients:

  • 4 slices of Pumpernickle bread
  • 100 g of Philadelphia cream cheese
  • 6 stems of fresh chives
  • 1 level teaspoon of mixed salt and pepper
  • 1 pot of salmon roe or caviar of your choice

1. Blend together the cream cheese, chives, salt and pepper.

2. Spread the bread slices with the cheese, top with the caviar and refridgerate until ready to serve
